Traceability is the ability to track any food product, ingredient, or material through all stages of production, processing, and distribution. This training covers the complete system, from lot identification to testing. To understand how to maintain these records, see Document Control & Record Keeping.
Lot identification is a unique code assigned to a batch of product. It is critical for pinpointing affected products during a recall and for maintaining traceability from inputs to finished goods. This training specifically covers lot identification and traceability.
"Farm to fork" traceability is the system of tracking a food product from its source (the farm or supplier) all the way to the final consumer (the fork). This training explains how this concept is applied in a food plant.
A traceability system is tested by performing a mock recall. This involves selecting a batch of finished product and tracing it back to its original raw materials, or vice versa. The course covers best practices for "Testing Trace systems."
Under the Food Safety Modernization Act (FSMA), Section 204 establishes the Food Traceability Rule, which requires additional recordkeeping for certain foods. For official and complete information, refer to the FDA's FSMA Final Rule for Food Traceability.
